Eat Well. . . Live Happy!

That is the motto of Fresco Fresh Food Deli and Fresco de Noche Restaurant located in The Mall at 206 in Flanders, New Jersey.  Fresco, which is Spanish for “fresh”, is the perfect name for this eatery because partners Marco Rojas and Carlos Cervantes focus on providing only the freshest foods, including freshly rolled tortillas every night.

Partners Marco Rojas and Carlos Cervantes both have “deep food industry knowledge, experience, and accomplishments.”  Marco has 20-years experience as a chef, with prior experiences including being the Executive Chef at the Black Horse Inn, Short Hills Country Club, and Rockaway River Country Club.  Carlos has approximately 25-years experience working in hotels and managing various restaurants, as well as being the catering manager at the Madison Hotel in Morristown, New Jersey for the past 11-years.

Marco and Carlos opened Fresco Fresh Food Deli in February 2006 with the goal of establishing a “successful retail food business that provides convenience of a delicatessen, combined with a creative and friendly casual restaurant setting.”  The restaurant Fresco de Noche opened in October 2006 with 7 tables.

The restaurant marries the heritages of the two partners – Caribbean and Mexican.  Marco is from Guadalajara, and Carlos has a Cuban heritage.  The deli menu includes authentic Cuban sandwiches, and the restaurant menu includes authentic Mexican fare.  Executive Chef Marco Rojas showcases his heritage and the cuisine from his childhood including homemade guacamole and tamales, fresh tortillas, chicken mole, and flan for dessert. 

“He’s just got it!” states Carlos Cervantes about his partner, who is completely self-taught.

If you enjoy ethnic foods, then this is a restaurant that should not be missed.  You will be greeted with a smile and the aroma of fresh food.  Carlos and Marco opened the restaurant because the love what they do, and you will enjoy a intimate, family friendly dining experience.
